Tofu Hamburger

~Ground meat and tofu are a welcome addition to this high protein main dish.~


6 ounces(150g) tofu, well drainedTofu Hamburger Image

1/2 pound (225g) lean ground beef

3 tablespoons green onion, chopped

1 teaspoon gingerroot, finely chopped

1 clove garlic, crushed

1 tablespoon sesame seeds, toasted

1 tablespoon soy sauce

1/2 teaspoon salt

Dash of pepper

1/4 cup all-purpose flour

1 tablespoon oil

Instructions:

1. Drain water out from tofu. Crumble tofu with folk, mix with ground beef.

2. Add chopped green onion, gingerroot and crushed garlic.

3. Season with soy sauce, salt and dash of pepper; mix well.

4. Add toasted sesame seeds. Make 4 hamburger patties.

5. Coat hamburger patties with tofu.

6. Heat oil in a skillet and fry hamburger patties until nicely browned both sides.

Tofu Tempura

~Potatoes, carrots or assorted vegetable tempura can be served with Tofu tempura.~

24 ounces(600g) tofu, well drainedTofu Tempura Image

1 egg, beaten

1 cup of ice-cold water

1 1/3 cups all-purpose flour

1/2 teaspoons salt(optional)

4 fresh spinach leaves, chopped

Vegetable oil for deep-frying

Instructions:

1. Pat tofu with paper towel to dry then cut it into halves. Cut into 4 triangular pieces; roll each piece in the flour. Set aside. Mix beaten egg, water, flour, salt and spinach leaves until flour is moistened. Batter will be slightly lumpy. Do not stir batter again after the initial mixing.

2. Heat vegetable oil(1 1/2 inches = 2.5cm to 3.7cm ) in work, skillet or deep fryer to 350 to 360 degrees. Dip tofu pieces into batter by hand or with tongs, spoon or chopsticks. Allow excess batter to drip into bowl. Fry a few pieces at a time until golden brown, turning once, 2 to 3 minutes. Use a mesh skimmer or perforated metal spoon or spatula to remove tofu from oil. Allow excess oil to drain from tofu. Transfer tofu on plate or individual small dish. Serve accompanied by Tempura sauce and garnishes. Select according to personal preference.

Ingredients for Tempura Sauce:

1 cup soup-stock for chicken broth

1/4 cup soy sauce

1/4 cup Mirin*, Sake* or cooking sherry wine with 1 teaspoon sugar

Combine all ingredients and bring it to a boil. Serve the tempura sauce in individual bowls.

Garnishes

Grated Daikon radish

Grated gingerroot

Toasted sesame seeds

Chopped green onion

Lemon wedges

Salt & pepper

*Available at grocery stores, health food store(some) or at large supermarkets.

Tofu Omelet

~Start your day with rich protein food. For your breakfast, serve with whole-wheat toast.~

3 ounces (75g) tofu, well drainedTofu Omelet Image

2 eggs, beaten

1 cheese slice or 2 tablespoons grated cheese

1 tablespoon butter or margarine

1/4 each teaspoon salt & pepper

Instructions:

1. You need to mash tofu and season it with salt & pepper. Melt butter or margarine in skillet.

2. Pour beaten eggs in skillet and swish it around quickly so that it would not stick. Cover bottom of the skillet.

3. Add cheese and tofu. Cook over medium high heat until cheese melts. Fold in half then serve.

Cheese Casserole

~Cheddar Cheese and Tofu combination make excellent main dish. Serve with fresh vegetable salad.~

12 ounces (300g) tofu, well drained

8 ounces (1 cup) meat sauce

3 sliced cheddar cheese, or 1 cup shredded cheddar cheese (4 ounces=120g)

2/3 cup of soft bread crumbs

1 tablespoon butter or margarine

2 tablespoons milk

1/8 teaspoon each salt & pepper

Instructions:

1. Pat tofu lightly with cotton or paper towel to remove water and then cut into 8 slices, 1/2 inch thick.

2. Lightly brush oblong baking dish with 1 tablespoon butter or margarine. Place tofu and sprinkle with 2 tablespoons milk.

3. Pour meat sauce over tofu.

4. Put cheese slices on top of meat sauce.

5. Sprinkle bread crumbs over cheese slices.

6. Prepare oven and bake uncovered in 350? for 20 minutes, until cheese melts. When done, take the pan out of the oven and let it cool for 10 minutes. Sliced it as desired then serve.
