Grilled Cheese Sandwich

~Great for lunch served with milk or fruit juice.~


12 ounces (300g) tofu, well pressed, well drained

2 tablespoons flour

4 sliced cheddar cheese

1 tablespoon butter or margarine

ketchup, mustard, parsley

Instructions:

1. Cut tofu into 8 1/2-inch thick slices.

2. Coat both sides of tofu with flour. In a 10-inch skillet, melt margarine over low heat. Add in sliced tofu. Saute tofu until golden brown.

3. Fold four cheese slices and place on top of four tofu slices. Cover with other pieces of tofu. Grill till lightly brown or cheese melt. Serve with ketchup if desired.

Cheese Casserole

~Cheddar Cheese and Tofu combination make excellent main dish. Serve with fresh vegetable salad.~

12 ounces (300g) tofu, well drained

8 ounces (1 cup) meat sauce

3 sliced cheddar cheese, or 1 cup shredded cheddar cheese (4 ounces=120g)

2/3 cup of soft bread crumbs

1 tablespoon butter or margarine

2 tablespoons milk

1/8 teaspoon each salt & pepper

Instructions:

1. Pat tofu lightly with cotton or paper towel to remove water and then cut into 8 slices, 1/2 inch thick.

2. Lightly brush oblong baking dish with 1 tablespoon butter or margarine. Place tofu and sprinkle with 2 tablespoons milk.

3. Pour meat sauce over tofu.

4. Put cheese slices on top of meat sauce.

5. Sprinkle bread crumbs over cheese slices.

6. Prepare oven and bake uncovered in 350? for 20 minutes, until cheese melts. When done, take the pan out of the oven and let it cool for 10 minutes. Sliced it as desired then serve.
